1 cup oats
1/2 cup plain wholemeal flour
1/2 cup plain flour
1 cup desiccated coconut
3/4 cup castor sugar
1 1/2 teaspoons baking soda
4 tablespoons golden syrup
1/2 cup canola oil
1 egg, lightly beaten
Step 1 Preheat the oven to 160°C. Line 2 baking trays with baking paper.
Step 2 Place the oats, wholemeal and plain flour, coconut and sugar in a large bowl. Mix and set aside.
Step 3 Place the baking soda, golden syrup, oil and egg in a small jug and whisk to combine. Add to the dry ingredients and stir well.
Step 4 Roll teaspoonfuls of the mixture into 3cm balls. Place balls 4cm apart on the baking trays and flatten with a fork.
Step 5 Bake for 15 minutes, until golden. Allow to cool on the trays then store the cookies in an airtight container.
