1 cup sugar
1 1/2 cups low-fat plain yoghurt
2 cups self-raising flour
5 green apples, peeled, diced (small)
250g strawberries, sliced, to serve
icing sugar, to serve
Step 1 Preheat oven to 160ºC. Line a 22cm-round cake tin with baking paper. Beat eggs and sugar until thick and creamy.
Step 2 Stir in yoghurt, flour and apples with a wooden spoon until just combined.
Step 3 Pour mixture into prepared cake tin. Bake for 1 hour 20 minutes or until a skewer inserted into cake comes out clean.
Step 4 Allow to cool then serve with fresh strawberries or other fruit and dust with icing sugar.
