Bread and butter pudding

Time to make: 45 mins, plus 40 mins standing
Total cost: $8.80 / $1.10 per serve

 

 

 

12 slices fruit bread
2 tablespoons reduced-fat spreadoil spray, to grease
1 cup diced cooked apple
1/2 teaspoon ground cinnamon
3 eggs
2 cups trim milk
3 tablespoons soft brown sugar
Instructions

Step 1 Apply a thin layer of spread to bread slices. Arrange half the slices spread-side up in a large, lightly greased dish.

Step 2 Cover bread with apple. Sprinkle with half the cinnamon. Cover with remaining bread, spread-side down.

Step 3 Beat eggs and milk together. Pour over bread. Press down lightly with your hands. Sprinkle with the remaining cinnamon and sugar.

Step 4 Leave to stand for at least 40 minutes before baking at 180°C for 30 minutes. Dust with icing sugar, if preferred.
