Serves: 12 (makes 12 slices)

310g bottle apple sauce
1/2 cup cocoa powder
1 teaspoon baking powder
1 cup flour
1 egg, beaten
1/4 cup trim milk
1/2 cup dark chocolate chips
15 dried apricots, halved
Instructions

Step 1 Heat oven to 175ºC. Grease a 24x16cm baking tin with a little reduced-fat spread.

Step 2 In a large bowl, mix apple sauce and dry ingredients until just combined. Do nox over-mix. While stirring gently, add egg and milk. Add chocolate chips then apricots.

Step 3 Pour into prepared tray and bake for 30 minutes until springy to touch. Leave to cool and cut in 12 slices. Store in an airtight container for 2-3 days or freeze sliced portions.
