8 chocolate-chip cookies
1/3 cup (80g) extra-light cream cheese spread, room temperature
3 teaspoons icing sugar
150g strawberries or other fresh fruit, chopped
Step 1 Preheat oven to 180ºC. Place cookies on a baking tray. Bake for 5 minutes or until softened then press into base of muffin-tin holes. Stand for 10 minutes or until cold and firm.
Step 2 Meanwhile, combine cream cheese and icing sugar. Spoon mixture into cookie bases and top with a few berries. Serve the remaining berries alongside tarts.
