Nana’s fruit bran loaf

Serves: 8 (makes 8 slices)
Time to make: 1 hr 15 mins (Hands-on time: 30 mins, Cooking time: 45 mins)

1 cup mixed dried fruit (we used fruitcake mix)
1 cup All-Bran cereal
1/2 cup brown sugar
1 cup trim milk
oil spray
1 teaspoon ground cinnamon
130g (1 cup) flour
1/2 teaspoon baking soda
1 teaspoon baking powder
1/3 cup trim milk
Instructions

Step 1 In a bowl mix dried fruit, cereal, sugar and the first measure of milk. Mix well and set aside for 30 minutes.

Step 2 Preheat oven to 170°C. Spray a loaf tin with cooking spray. Sift dry ingredients and mix into bran mixture, gradually adding the second measure of milk until combined.

Step 3 Pour into prepared tin and bake in oven for 40-45 minutes until risen well. Remove and cool on a wire rack. Store for up to 1 week or freeze in slices.
